I would like to announce that I have become lazy. Well, sort of. Butit's going to benefit you because I have 15 minute stovetop granola coming for you today. Yippee!

The thing is, I seem to have run out of time for lots of things lately. I don't know if it's because my bedtime has come back by about an hour since I've become a human incubator, or because it's summer and light outside for longer so it always feels earlier than what it actually is, or because we have had the busiest social calendar of our lives in addition to trying to get ready for this baby for the last few months. Anyway, for whatever reason, evenings - particularly Sunday evenings - turn into little worker bee events involving me running around like a headless chicken trying to bake for the week, reassemble the house back into a reasonable state, prepare myself for the work week and about 1 million other things. And if Josh is really lucky and I'm tired because we've had a big weekend, exhausted/overwhelmed crying is also something that is generally happening at this point.

It's great.

So once all of this madness is over and we are sitting down with dinner I usually realise that I'm out of granola. Typically the time I figurethis out, it's about 9pm so clearly turning on the oven and hanging around for 40 minutes isn't super high on my priority list at that time of night. I mean, as much as I love every single one of my regular oven baked granola recipes...mocha java, honey nut, , pumpkin spice...sometimes they take too long. Soone night, I decided to throw all of the ingredients for granola into the frying pan and just toast it a bit to see what happened. And what happened was something truly magical. Well not really. Because I just made granola that tasted like I had lovingly baked it for 40 minutes in the oven. But I hadn't. And that is the magical thing.

Oats, coconut, almonds & cinnamon go into a frying pan over a medium heat. Toast them for about 5-10 minutes until they start to smell good. Add a bit of oil and some honey, stir it up and cook for a further 2-3 minutes and then remove from the heat, tip onto a baking sheet and allow to cool. And that's it. 15 minute stovetop granola coming at ya.

This recipe is super simple - I included only the most basic ingredients because this is granola in a hurry. Feel free to take your time and add more ingredients - other nuts, seeds, different spices - but this is the recipe that will get you through those panicked "omg I have nothing for breakfast tomorrow" moments that always seem to strike here. Also, if I am making it at 9pm, I tip it onto the baking sheet to cool, cover it with a clean tea towel or a cloth and leave it out to cool overnight. No need to wait for it to cool completely to put it in a container, just leave it out.

This batch makes enough to last me the week and then some but feel free to make more, less or just whatever you like. The recipe is super customisable and you really can't get it wrong. Just don't walk away from the stove for more than a few minutes while you're making it - it can burn and this will lead to the aforementioned tears. Eeek.

This is lazy girl cooking at it's finest, but it doesn't even matter because even though we are taking the lazy route let's not forget...we are still making homemade granola!! And that counts as a major win.

Ingredients

  • 3 cups rolled oats
  • ½ cup almonds
  • ½ cup dessicated coconut
  • 2 teaspoon cinnamon
  • ¼ cup honey
  • ¼ cup rice bran or coconut oil

Instructions

  • Add the oats, coconut, almonds & cinnamon to a frying pan and toast over a medium heat for 5-10 minutes until they start to smell good.

  • Add the oil and honey, stir to combine and cook for a further 2-3 minutes.

  • Remove from the heat, tip the granola onto a baking sheet and allow to cool.

  • Store in an airtight container at room temperature for a couple of weeks.

    Easy and simple didn't have honey or maple syrup so I used a equal measurement of brown sugar mixed with the coconut oil and also was out of nuts so used full cup of shredded coconut and as well as double the cinnamon thanks for sharing this was my first attempt at stovetop granola
