The month when I don’t mind being so busy I forget what I went to the bathroom for!
Yes, December is here and I’m so pumped!
I’m looking forward to juggling holiday parties, cookie exchanges, package mailing, holiday menu shopping, my daughter’s month-long birthday celebrations and work!
You see, to me, all of these things have one thing in common – and that is food!
Holiday parties = homemade cake!
Cookie exchanges = homemade cookies!
Mailed packages = more homemade cookies!
Christmas Dinner = me cooking food for it!
And – well, my daughter says her month long birthday celebrations wouldn’t be celebrations if not for food!
As for work – yeah, the first part of one of my job descriptions begins with “food”…
This year for our Christmas dinner, I planned on improving my Easy Vegetarian Meatballs Recipe.
What are the ingredients needed for these Easy Meatless Veggie balls Recipe?
You will need the following 12 main ingredients for these Easy Meatless Veggie balls, along with salt, pepper, and oil:
- Almond meal
- 1 can of chickpeas
- Red onion finely diced
- Garlic diced finely
- Grated ginger
- Potato boiled and mashed roughly with a fork
- Kale chopped up
- Turmeric
- Smoked paprika
- Coriander
- Carrot grated
- Egg
You will also need salt and pepper to taste and a bit of oil.
On my early attempts, I ended up blending the ingredients for too long and ended up with a bit of a gooey mix that might have resulted in delicious veggie meatless pancakes instead of balls!
Then, I changed up the process and only blended up the chickpeas a tad bit and mixed them with the other ingredients, and voila – these plant-based, Easy Meatless Veggie Balls were the result!

These Easy Meatless Veggie balls are so tasty! They are packed with flavor and easy-to-find ingredients.
Yes, there are several pre-made veggie meatballs out there like these, but, every now and then, I like to take the extra time and whip up some that are packed full of veggies and are so tasty, they do not even need a sauce or chutney to accompany them.
For our holiday dinner, I plan on serving these on a colorful bed of sauteed peppers and onions – just like you see here, as my daughter has managed to convince my mom to also go vegetarian.

Ingredients
- 1/4 cup almond meal
- 1 15 oz can chickpeas
- 1/2 red onion finely diced
- 3 cloves garlic diced finely
- 1 tsp freshly grated ginger
- 1 potato boiled and mashed roughly with a fork
- 1/2 cup kale chopped up
- 1/2 tsp turmeric
- 1 tsp smoked paprika
- 1 tsp coriander
- 1 carrot grated
- 1 egg
- 3/4 tsp each salt and pepper
- olive oil
Instructions
- Add the chickpeas to a food processor or blender and pulse till they are broken up - almost smashed in appearance. Then scoop out the smashed chickpeas into a bowl.
- Also to the bowl, add in the grated carrot, red onion, garlic, potato, ginger, kale, turmeric, paprika, coriander, almond meal, egg and salt and pepper and mix with a spoon or just get your hands in there.
- Form into balls and then saute in an oven safe pan/skillet with olive oil until very slightly browned.
- Then place pan in the oven and bake Veggie Meatless Balls for 25 minutes at 375 degrees.
- Enjoy warm on a bed of sauteed tri-color bell peppers and onions along with sriracha, sambal oleak or simply ketchup.
